Preheat Pigeon Super Air Fryer at 180° C for 5 minutes.
Ingredients
- Tart shells
- 200 gms flour
- 100 gms cold butter (diced)
- 2 tbsp icing sugar
- 3 tbsp cold water
Cream Cheese Filling
- 250 gms cream cheese
- 50 gms caster sugar
- 150 ml whipping cream
- 1 tbsp lemon juice
How to cook
Step 1: Place flour in a large bowl. Add butter and rub it in with your fingertips until the mixture resembles bread crumbs.
Step 2: Add icing sugar, add water to form a soft dough.
Step 3: Cover with a cling film and chill for 30 minutes.
Step 4: Lightly butter tartlet cases.
Step 5: Roll the pastry out on a lightly floured surface and use it to line the tartlet cases.
Step 6: Prick the base of the cases with a fork, place a piece of foil in the bottom and some beans on top of it (this will prevent the dough from puffing)
Step 7: Bake in a pre heated air fryer at 180C for 15 minutes, then remove the beans and the foil and bake for 5 minutes, until crisp and golden brown.
Step 8: Transfer to a wire rack to cool.
Step 9: Using an electric mixer beat cream cheese with caster sugar.
Step 10: Whip the cream until thick, and mix it with the cheese mixture.
Step 11: Add the lemon juice and whisk till the whole mixture is thick.
Step 12: Fill the cooled tart shells with the cheese mixture and set it in the fridge for 2 hours.
Step 13: Arrange assorted fruits on the tarts.
